Our vinegars are slow fermented using a process from the 1800s which we recreated in partnership with local universities. After fermentation we age our vinegars in oak barrels and hand bottle every bottle. We call it our Ultimate Red Wine Vinegar for a reason. 19.53 Miles From The Tree Apple Cider Vinegar is Made with apple cider from northern Massachusetts this ACV is our tribute to Johnny Appleseed who was born exactly 19.53 miles from our vinegar works and is credited with spreading (cider!) apple trees. We think our former neighbor would really appreciate what we have done with his orchards and be smitten by this slightly sweet and highly tangy small-batch New England ACV. California Junmai Rice Wine Vinegar is Made with junmai-grade sake from California this rice wine vinegar is elegant and has more weight than commercial vinegars. It is slow fermented in small batches using a unique process from the early 1800s and aged in 25-gallon American oak barrels.
